Paper Cut is a cocktail bar and rotating art space in East Austin, founded by Eric Schild. After running a contemporary gallery during and after COVID, Schild noticed a connection between art and hospitality. He partnered with a bartender who had been exploring similar ideas, and Paper Cut was the result.

The venue highlights mid-career artists - local, national, and international. Every few months, a new artist is featured, and the cocktail menu is redesigned based on their heritage and responses to a questionnaire.

Paper Cut was recently named a Regional Top 10 honoree in the Best New U.S. Cocktail Bar category at the 2025 Spirited Awards by Tales of the Cocktail.
